    The test of a knife for me is that it can bone out a whole deer in the field without touching the blade. How do these go at that? That bottom one looks a useful shape.

    Well I've never boned out whole a deer but I've processed a lot small game animals at on time without stopping to sharpen any of these knives.

    I can't get a whole deer out of my victory without a strop or steel, they are fairly soft. Take a mean edge though. I find it pretty comparable to the victorinox boning knives.
    Being soft they respond OK to a bit of bone contact and a steel to get them back but dull quickly with abrasive tasks like skinning and hocking cuts

    Do you find victorinox better than victory? I have looked into victorinox.

    Exactly my experience with the victornox boning knife I have. You can get it real sharp but will suffer quickly if having to go through hair. Bonus as you point out is if it dulls it's normally just a steel to get it serviceable again. At the end of the day for the price of them you really can't fault them.

    @Tahr I've recently brought a Knives of Alaska knife in D2 (Alpha wolf). I have quickly found the handle is probably too small for my hands but suits the Mrs very nicely so it'll be hers. Any recommendations on a similar style but larger? You seem to be a bit of a font of knife knowledge.

    Nah, about the same. Buy nz made �� nothing wrong with the victory knives, bang for buck they are as good as any.

    In reference to the last 5 posts, this is why I carry a pair of knives - one for skinning and one for boning. Keep your skinning knife for ........ skinning, ...... and dealing to any joints. This keeps your boning knife in top condition for taking out the key muscle groups.

    There are plenty of knives and steels that will process more than one deer and up to several without touching the blade. They just cost a bit more.

    Also technique is important. The more you obliquely hit bone the shorter time the edge will last.

    You either have softer/cheaper steel and do the edge with a steel a few times during a deer, or pay a bit more and you don't have to.

    When I was meat hunting back in the day using a steel to do the edge on the old knifes every now and again while doing a deer or 2 on the ground was actually a chance to straighten my back and relax for a moment which was good.

    I only progressed to flash Harry knives and different steels because of an interest I had in them. There was no real practical need.

    Use what suits you. Even a Mercator - especially if you really want to bugger your back - stupid bloody thing .

    Yeah I carry a wee havalon as a skinning cuts/backup knife, although any properly treated steel from D2 on up should deal to both no problem. If you don't use your knife like a pry bar you an run them a bit harder as well which always helps.
