Thanks for the input guys. Some interesting options out there but looks like the summit star ticks all the boxes. Mostly due to the full sized floor.
I have a DD hammock Pyramid style, 600g outer with a about the same inner mesh tent, can be pitched together or just as a fly. I like the idea and easy to pitch however I am 6'2" and due to the sloping sides there is not enough room in it without either my head or feet touching the tent sides so end up with a wet sleeping bag. enough room for the dog and gear on one side and sleeping on the other
DD Hammocks Tent - took the fly on this trip as well as we had a wet start to the trip, just the outer pitched no inner
Good concept but I need more room or something with vertical sides. I do like the look of the intents indie-2 which looks to have enough room at 270cms and the two pole concept allows to sleep diagonal.

Seekoutside, an American company do a lot of of pyramid tents. They can come with stove jacks, they also make titanium backpacking stoves.
Dimensions looked ok on paper but in real life not so good. Can't sleep diagonally as there's a pole in the middle of the tent.... who would have thought that aye.
I'm 6"8 I feel your pain, the indie 2 does look good but I'd still be concerned about the sloping walls, may or may not be an issue. I still love my Mongar it's a copy of an msr hubba hubba it's got penty of room and no issues with face being too close to the walls/roof.

I use 2 pyramid type shelters one using one pole and one using 2. Both are great and handle the wind pretty good. A mate uses a more pyramid style tent that uses a higher single pole and its even better in the weather but requires a special pole or strapping together 2 trekking poles. Have had mine in some decent weather including some ripping winds.
Tried to add pictures but forums playing up.
