Yeah I take Sambar for meat, a lot better than Fallow that's for sure, it's like any game meat it's the way you treat it after the kill, cooling it down asap is very important here be the same for you guys too, and I break it up to hang back at camp until I can get it home into the cooler, always hang them for at least a week/10 days min.
Many years ago to stop the waste I bought a commercial sausage maker and my snags disappear real fast when having a few mates around for a BBQ, roast ya gotta do slow and steaks cook em rare, it's a dry meat so important to cook using marinades.
Once then weather starts cooling down here in another few months I'll be heading bush to fill the freezer again.

Ha! I have not tried Sambar but was told it was terrible meat.
Better than fallow is saying something. A fat fallow is hard to beat for chewing I reckon.

I find fallow very hit and miss, you can shoot an old hind thats delicious, tender and juicy but last year I shot a spiker in winter and he was one of the gamiest deer I'd ever eaten. Sambar are very solid (for anyone who hasnt actually seen them in the flesh), plump animals. Feed probably has a bearing as well I spose...
Have to come hunt some sambar with me one day @Gibo and @R93 and taste em for yourself!
I would say it is a tucker thing as well but I have never eaten sambar. Only going on what I have been told. I am keen to try it in any case. I have never had a bad fallow but everyone I have eaten has come out of the same area. They have a fat layer at a certain time of year better than any other deer species I have seen.
