Scott, you will not do your holiday justice if you do not go to the South Island.
Go to Christchurch (don't talk to anyone there as they are a strange one eyed breed) Go across Arthurs Pass to Greymouth, down the West Coast through Franz Joesph and Fox Glacier to Haast (must stop at the Curly Tree for a whitebait fritter), Wanaka, Queenstown, Te Anau, Milford Sound, consider Dunedin then up through the Caitlins back to Queenstown, Tekapo, bypass Christchurch, and up to Kaikoura and Nelson/Blenhiem.
Now I have spent your money, anything else I can help you with?
Everyone's in it for the American dollar I see, just kidding. I may have to go to both islands, it's just money afterall, I can't take it with me when I die so I better enjoy it while I'm young!

Expect to fly in at some stage more as a time saving tool than anything else.
you can't really donate the meat without creating issues here, but I'm sure there will be enough volunteers you can take it off your hands.
And if you don't piss us off in the 2yrs before you get here I think you will find a few homes to stay in when you get here. For instance I'm sure I can supply a bed if you fly in/out via Auckland.
Oh and we don't have Hogs here . . .we have pigs and it usually involves dogs and a knife.
