    This is something you do get better at the more you do it, I am by no means fast but I consider myself proficient. It just comes with practice.
    As others have said cut in around the poop shoot (a nice knife with a good point and reasonable length helps) also cut around the wind pipe where it enters the chest after cutting the wind pipe further up closer to the head. Carefully open the gut cavity using your fingers to stop the point of your knife puncturing the gut bag, pull the poop shoot out along with the gut bag, then trim around the diaphragm and pull the heart, lungs and osophegus out (cutting around the wind pipe as mentioned earlier really helps free this up and makes it easier to pull out).
    That's how I do it anyway, just need to get hands dirty and learn, best way is get someone else to talk you through it whilst you do it, I found I learnt far more by being instructed on it rather than reading about it and watching.
