Easy to sharpen and hold an edge should never be in the same sentence.
However mine gutted, headed and hocked then skinned a large hind without needing touching up.
Certainly not a "hard" knife but plenty hard enough to last for a large animal from start to finish.
Iv never owned a svord but iv owned a Gerber made with 660c s/s(dont think they make them anymore they all seem to be 400)
That was hard as hell and lasted ages but your average punter would have trouble getting it sharp.
I would have no problem taking it on a week long deer trip sharpened to my liking without taking sharpening gear providing I used it with caution not to cut hard into bone(as your prone to do hocking ect)
