3 brown onions
500grm venison mince
500grm beef mince
2T garlic
2-10 chilli depending on tastes
A few capsicum
one beef oxo cube and one vege oxo cube
1 can chick peas
1can kidney beans
1 can tomato
1/2 bottle tomato paste
1 can creamed corn or just plain ol frozen corn kernels.
A few real tomato's
3 portobello mushrooms
What ever herbs and spices you have at hand
Rice
loaf of fresh homemade bread.
Dice up the onions and fry off in a little oil till translucent and while that is happening very finely dice up the mushrooms your wife hates and add in so she never even knows they were there
boil the jug and fill a mug with hot water to dissolve the oxo cubes in while you are browning off the mince, in duck fat is great if you have it or just a bit of oil and butter if you dont.....veni mince especially needs added fat.
select a few capsicum and chili from the garden and char on the bbq to add some smoky flavor( char is chef for burn the heck out of the outside but not actually cook it)
Dice em up and add in.
Drain the beans and chick peas and rinse them well in a sieve then add with the creamed corn to everything else.
Add in the cheaters stock.
add in the garlic and any herbs you like
Bring up to a simmer and taste for heat and seasoning....I added salt and doubled chilli.
Best prepared well before eating as the chilli has a habit of improving in heat as it ages.
Fang up some rice and slice the fresh bread.
Grate a bit of cheese on top and a bit of sour cream if you have it.
Not counting the mince as it was in the freezer and the capsicum/chilli as it was in the garden this meal cost about 6 dollars and fed my family of four with leftovers for tomorrows lunch.
