    Cold smoking?

    Anyone do cold smoking? Looking at a Smokai cold smoke generator. Obviously good for trout and salmon, but not too many of those in the north. Could cold smoke kingfish and similar. I know some people cold smoke meat before cooking it.

    I've got the ufo cold smoke generator. Works well I love smoked food I've smoked a lamb roast before cooking it and smoking sausages before cooking them is good as well

    the smokis work good just clean out smoke tube of tar each use if you were down my my you could have my huge set up for a feed it takes about 50 chickens made on a x commercial steam cooker , they make nice bacon too .

    Cousin gave me his old UFO. Was heavily creosoted, I just gave it a blast on my high pressure wok burner and heated the shit out of it. Turned all the creosote to dust. Spotless now.

    Built this smoking box this weekend out of macro shorts from the bros mill. Should be able to put a gas burner in bottom if I want a bit of heat. Couple pork belly’s brining in the fridge for bacon. Maple crystals are your friend. Curing agent and maple crystals and vac pack and put in fridge for 10 days.
