    Dougie's Duck

    Prep Time: 5 minutes

    Cook Time: 15 minutes

    Total Time: 20 minutes

    Ingredients:
    •2 paradise duck breasts
    •1/2 teaspoon salt
    •1/4 teaspoon ground black pepper
    •4 tablespoons honey
    •3 tablespoons balsamic vinegar
    •Walnuts
    •Cranberry/blueberry/plum sauce

    Score duck breasts, marinade with rock salt and pepper. Heat skillet to med-high heat.

    Chuck the duck on for a few minutes on the higher heat. Lower heat to medium and cook for a further 5mins.
    Turn, cook for another five.

    During this time I boiled some water and put on green beans. I also prepared fresh lettuce on the plates, unloaded the dishwasher and set the table while lazy man-friend continued to tap away on his computer, but that is besides the point

    When duck is cooked, chuck on a plate and put in warmed oven. 50oC or so is fine.

    Keep the juices in the pan and add vinegar (I used this beaaaaaaaaatiful Delemaine stuff that smells of lovely port and wines and nom nom nom yumminess) and honey. I don't like it too sweet so reduced honey to about three tablespoons. Mix and let thicken over a low heat, maybe three to five minutes.

    Return duck to the pan and flip, cover in the sauce, let it soak it all up.

    Put beans on the plates, duck on top, add a tablespoon of berry sauce and some chopped walnuts to the sauce. Allow to thicken again for a minute or so and stir it up. Pour generously over meal.

    This was super easy and quick and absolutely delicious. Luckily I think I have converted the other half to actually like game meat. Seriously this was easy and fresh and disappeared quickly! Maybe beef it up with some rice if you are really starving - the recipe I based this from was for an entre.

    Just curious, if you can beef up with rice, can you rice down with beef???
