    Rabbit and mustard, or cream are beautiful, butter and bacon make everything better.
    We once had a French agricultural student stay with us, she cooked both and a casserole of hare that used red wine as a marinade that her grandma taught her.
    She made it with the first hare she had ever shot took 2 days to do but was worth the wait.

    We're still doing KFB with the back legs, but I've reduced cooking time further. 20 minutes on each side in preheated oil.

    Its free meat on the farm. Saves us having to tip over something bigger. After doing the cubing and soak in light brine overnight thing, I szzhizz things up by adding it to any of those Asian home gourmet sachets. Hard to tell its game (for those with sensitive dinner companions!)

    A crying shame that selling rabbit meat for human consumption was made illegal in 1967. 'Pest' status buggered it. Like most other game meats its about as organic as it comes

    i can remember rabbit on sale in supermarkets in the late 80's and we were importing it from china!!!

    A bit of work pulling it all together, but well worth the effort.
