Just cook it to medium man.
Heart makes mean fajitas. I serve it in the cast iron still sizzling away. I've introduced and converted a few people to the idea of offal with the above. Works well.
Look up a traditional seasoning recipe if you have the patience, (worth it). If not just use one of the pre made numbers. Throw in a few sliced capsicums and onions and serve with hot good quality corn tortillas, a bit of salsa and whatever other fixings you fancy.
Mean with tacos too, I do a modified taco de lengue (tounge taco) recipe with heart that is the business.
