    anyone have a method to do the OTHER end of the chops...eg the ribs without making sharp edges so they dont puncture bags????? the only way I can think of and havent tried yet is to cut the meat bit longer than the bone bit and fold it over the end.......Mrs gets highly pissed with suckymoto bags getting pierced all the time.

    Ive done the same as you with meat cleaver to avoid bone chips.

    I often marinate beef in kiwifruit fragments for 2 hours. Seems to breakdown the fibres quite well.

    I'm getting older and lazier, so recently bought a cordless reciprocating saw and stainless meat blade for cutting through the backbone, it works well but needed some kiwi ingenuity to try and keep meat dust out of the inner workings...
    For cutting the flaps off the side of chops I use a saw, still get some sharp ends but less bone chips than an axe.

    When setting meat I point a fan at it hanging over nite by morning meat nice & set

    The punctured bag problem is something I've seen a lot of, even though I have seldom used a vacuum packer. The common 'freezer bags' from our local supermarkets are extremely thin compared to the old heavy-duty poly bags that seemed to be more common. Thicker bags are available at stores that specialise in packaging and I have a small stock of these. But they still get holes in them.

    I've become increasingly aware of all the plastic that we throw out. I am not a member of the Church of Climate Change and Environmental Fanaticism, but I do think we should be looking for better alternatives for many of the things that we currently do. A while back my wife brought home a packet of Proper Crisps that were labelled as having a compostable bag. I made some enquiries.... and contacted the bag supplier who I think were called Convex Packaging. I was told that they haven't tested the bags in long-term freezer conditions, but they sent me a few to try. So now I have some venison in a compostable bag in my freezer with a few months of test time still remaining. So far, so good. Nice sturdy bags too, although it appears that there isn't a huge ranges of sizes available yet.

    brown one 3nd from left would be first target for the pot. closely followed by the one who is far on left with just head poking out...even after shot it will try to follow its mates. you would have a ball in situation like that with your lever .357
    did you see the bergera 44 mag for sale????

    I didn't see the .44 mag, but I'd certainly like to play with one. However I'm thinking that the combo of 200 grain bullets in a .357 is plenty of power for me. I have all the components and reloading gear. If I get another rifle it is currently likely to be a fully suppressed (over barrel suppressor) .357 with a scope. I can then use my current Bergara with lighter projectiles. I do feel the pull toward a bigger bore though.... I'm thinking if a 44 mag is good, then a 45-70 is probably a whole lot better. And the cartridges are very attractive.

    you get a .45/70 and you will be playing with black powder sooner than you think.......loads of fun and smells even better.

    I think you know me quite well Micky. I even have a can of the black stuff somewhere. Dad once had a replica cap and ball pistol that we used to enjoy playing with... and you are right about the smell.

    Heh. One cartridge to rule them all. On the left is the good, old, accurate and reliable .22 Winchester subsonic. I've shot heaps of stuff with those. In the middle is the handloaded .357 magnum with the 200 grain Lee bullet... which is yet to be tested on game, although I'm confident that it will work because the 158 grain cast bullets I've used are fine. On the right is the cartridge I aspire to, the great 45-70 Government... although I would probably use cast bullets. The question is what rifle should I get to shoot those danged big bullets? And how effective would any efforts at suppressing be? A lever gun would be nice, but I'd lose a lot of brass. Something like an Uberti or Ruger No 1 would be aesthetically pleasing, but it wouldn't seem right to fit a suppressor to such nice firearms. The Bergara BA13 would be a good choice for a suppressed rig, but I wouldn't get that 'I'm going out on a hot date' feeling that the Ruger or Uberti might give me......

    Not where I am they aren't.
    Love to have a crack at a mob here and there and give the 357 a run
    even the 243 if they are a bit further out.
