    Great youtube channel for authentic indian recipes

    Ive recently found this indian chef on youtube and the recipes ive tried so far are incredibly tasty.
    Tried using my wild goat in the mutton (goat is sometimes called mutton by this guy apparently) recipes and the results were DIVINE.
    Some of the videos are more than a decade old so the video quality isn't great, but the guy is funny and the recipes are top notch.

    Nice one will add them to the to try list. Just cooking up the korma recipe that was on NZ Hunter adventures a few weeks back with some sika and it's really good. Cheers.

    Yes Youtube is a great place to find good authentic indian recipes, I like some of the village ones where they are cooking outside on a wood fire. But they sure do a lot of scraping/stirring the aluminium pots with there metal spatulas, I wonder how much aluminium shavings they ingest!!

    Here is a recipe for Vindaloo that I’ve had real success with, have also substituted beef for mutton.
    The Bin Inn here in Nelson has an amazing spice range for Indian cuisine.

    i love a good indian meal, i scare the chefs at my local as i eat it so hot it can turn my rear end into "japanese flag"
    may have to try one tonight as i havent eaten for a couple of days

    Mrs MB did a great goat biryani last night. We've done the same recipe with rabbit before. I've also been doing some Indian fish fry meals. Bloody awesome and only takes a few minutes preparation. Lots of recipes on YouTube.

    what fish did you use, obviously it needs to hold together and not flake apart.
    i like monkfish myself but fark its gettin expensive

    Used snapper fillets because I've got them coming out my ears! Unlike curries, it's not a long cooking process, so no different to any shallow frying recipe. Any fish would work. Next time, I'll scale, gut and steak the fish as per the video. The Indian boys at work do this with anything they can get their hands on whether it's shark, kahawai or tuna!

    more of a blue cod/monkfish guy myself but am jealous.
    i wonder if fish is possible in thai red/green/yellow curries which tend to simmer longer
    fark now i feel hungry, havent eaten since tuesday

    I can't think of another reason to live in Northland! (apart from maybe the weather)

    We do that too, but generally cook the curry and throw the fish in at the last minute otherwise it disintegrates. Fish doesn't really take on the flavour when you do it like this, but it's good enough. Guess you could marinade the fish in the curry, then remove it, cook everything else up, then put the fish back in if you were really keen.

    i spent most of my early years at the grandparents house in whangaerei, eventually moved there for near on a year for work reasons. remember KCC-FM ??
    honestly 4 season in one day !
    hated the heat and humidity, and ran way down south

    Haha! I like the heat (although not on the hill when hunting), not so much the humidity.

    Oh nice! I should check him out. A lot of the indian chefs on youtube have funny and engaging personalities.

    If Spice variety is something you are after....Try these guys ...https://yogijis.co.nz/

    I was looking for some chilli powder and silly me I asked the indian lass I worked with and she sent me there....The Chilli power, or should I say powders (there was many of them) were in the bulk bins not with a table spoon sized scoop, but with a scoop nearly the size of a small shovel (think 1 gallon bucket.....) and was priced per KG!!!!! Great value and the whole shop smelt spicy..
