    I've tried a lot of different recipes and mixes. This is the best one, the ole Steve Rinella special

    The orange juice adds a nice sweetness to it, you can skip the cayenne if its not your thing. His cook book is pretty solid as well, his duck breast recipe is my go to.

    Ive got wallaby leg sliced thin as steaks marinating at moment,fejoa and beer,some salt n pepper and soy sauce... will see how it comes out after wife chucks it through dehydrater..last lot of wallaby jerky was ok with just soy n honey.

    dont think any real difference..both are flavoured and dried/dehydrated strips of meat.
