    Toastie pie Whitebait.

    Heres a way we do them when on the coast. Have a fire going and a toastier pie maker, [we use the single round ones with folding hinge.] Piece of fresh bread with butter a good dollop of bait, season to taste and a squeeze of lemon, another piece of bread and toast in the fire till toasties are brown etc. Comes out great and a good snack to have while waiting on the next lift.

    Another way I like it is to dry as much moisture as possible out of the bait with paper towels etc then lightly flour, fluffing bait up so evenly coated. Then shallow fry in a butter - oil mix like chips, uses a lot of bait but worth it.
    Best done with fresh bait, not frozen.

    lol, nice but joking aside I find whitebait actually freezes really well its just that when cooked this way too much water comes out when defrosted.

    I like whitebait patties as simple as possible. Egg, salt, pepper, whitebait, wedge of lemon. Absolutely no tomato sauce! I like the salt being a course pink salt as opposed to fine regular salt.

    2 small eggs all of one and only the white of the other.
    A bit of garlic and herb salt and some ground pepper.
    Whisk it up until fluffy then fold in a pound or so of bait.
    Fry in lots of butter, add a squeeze of lemon juice to cooked patties.
    "Hunting and fishing" fucking over licenced firearms owners since ages ago.
